Hearty Chili Recipe

Instead of beef, try bison. Bison tastes very similar to beef, in fact, most people cannot tell the difference. Bison meat has fewer calories and less cholesterol than chicken or fish.

Yield: 16 (1 1/4 cup) servings

Hearty Chili Recipe

  • 2 pounds bison (can also use 95% fat free organic ground beef)
  • 1 medium sized sweet onion, chopped
  • 3 jalapeno peppers, deseeded and chopped
  • 4 Tbsp minced garlic
  • 2 15.5-ounce cans of no salt added kidney beans
  • 2 14.5-ounce cans of diced tomatoes
  • 1 28-ounce can tomato puree
  • 1 28-ounce can crushed tomatoes
  • 1 Tbsp Worcestershire sauce (gluten free, if needed)
  • 3 Tbsp dark brown sugar
  • 3 Tbsp chili powder
  • 1 tsp cayenne pepper (if desired)
  • 1/3 cup ketchup
  • 1 cup water
  • In a large stockpot over medium-high heat, add bison, onion, jalapenos and garlic. Cook until bison is fully cooked through. Drain any excess. Add the remaining ingredients to the pot, and turn the heat down to medium or medium-low. Allow the flavors to blend for at least 1 hour, stirring occasionally.
