Zucchini and Tomatoes

This delicious heart healthy side dish is full of flavor.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 2 servings

  • 1 small zucchini or summer squash, sliced 1/4 inch thick
  • 1 small onion, sliced into 1/4 inch wedges
  • 1 teaspoon olive oil
  • 1 tablespoon water
  • 2 small tomatoes cut into small wedges
  • 1/2 teaspoon garlic powder or 1 clove crushed garlic
  • 1/8 teaspoon fresh ground pepper
  • In a skillet, cook zucchini and onion in oil over medium heat. Add water as zucchini and onion start to stick to pan. Add remaining ingredients and cook on low for 3 minutes. Stir constantly to prevent sticking.
