Yield: 2 servings

1 small zucchini or summer squash, sliced 1/4 inch thick

1 small onion, sliced into 1/4 inch wedges

1 teaspoon olive oil

1 tablespoon water

2 small tomatoes cut into small wedges

1/2 teaspoon garlic powder or 1 clove crushed garlic

1/8 teaspoon fresh ground pepper

In a skillet, cook zucchini and onion in oil over medium heat. Add water as zucchini and onion start to stick to pan. Add remaining ingredients and cook on low for 3 minutes. Stir constantly to prevent sticking.
