Diced Gazpacho

Try this healthy gazpacho recipe with vitamin packed ingredients.
 

 

This cool soup is a great substitution for a side salad. With only 71 calories per serving, this healthy recipe is also great for dieters. Try tis gazpacho recipe as a healthy side to your Mexican dinner!

Yield: 4 servings

  • 2 ½ cups low sodium tomato juice
  • 1 cup chopped tomato
  • ½ cup chopped celery
  • ½ cup chopped green pepper
  • 1 clove garlic minced
  • ½ tsp freshly ground black pepper
  • 1 jalapeno deseeded and chopped
  • 1/3 cup chopped green onion
  • 2 tbsp white vinegar
  • 1 tbsp olive oil
  • 2 tsp chopped cilantro
  • Combine all ingredients and mix well. Cover and chill. Serve chilled.
