Morning Bread

Wake up to this low sodium and low fat bread for breakfast!
 

 

This whole grain bread is a great way to start the day with a heart healthy breakfast. The whole wheat flour offers an abundance of selenium, potassium and magnesium.

Yield: 30 servings, 1 large or 2 small loaves

  • 4 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 1/4 cup skim milk powder (optional)
  • 1/2 cup sunflower seeds or chopped nuts
  • 2 and 1/2 cup low fat yogurt
  • 2 tbsp sesame and/or poppy seeds
  • Preheat the oven to 350°F. Use either a 9 5/8 by 5 1/2 inch pan or two 8 1/2 by 4 inch pans. Spray with nonstick spray.

    In a large bowl, combine the flour, baking soda, salt, brown sugar and skim milk powder and stir until well blended.

    Add the nuts or sunflower seeds and yogurt and stir just to moisten the dry ingredients. The dough will be very thick and stiff.

    Spoon the batter into the loaf pan or pans. Smooth the top and sprinkle with the sesame and/or poppy seeds.

    Bake until a cake tester comes out clean, about 35 to 45 minutes for the small loaves or 50 to 60 minutes for the large loaf.
