Cabbage and Red Pepper Salad

Here is a low fat, heart healthy cabbage dish high in vitamin C!

Fill up on this side dish and save yourself the calories. It is only 53 calories per serving and loaded with vitamin C and fiber. And, because of the fiber, this recipe will help you stay full longer.

Yield: 8 servings

  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 3 tbsp sugar
  • 1/4 tsp celery seed
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 4 cups shredded cabbage
  • 3 large red bell peppers, cut into thin strips
  • 1 onion, thinly sliced
  • In a small saucepan, boil vinegar, water, sugar, celery seed, salt and black pepper until sugar dissolves. Reduce head to medium-low and simmer for 5 minutes. Remove from heat.

    In a very large nonstick saucepan, warm the oil over medium-high heat. Add the cabbage, bell peppers, and onion and toss gently. Sauté, tossing often until vegetables begin to soften and cook down, 6 to 7 minutes.

    Stir in the vinegar mixture and bring to a boil. Cover, reduce the heat and toss occasionally until the vegetables are very tender, 6 to 8 minutes.

    Serve warm or chilled.
