This cold soup is a great first course to any meal. It is packed with antioxidants and low in calories. Leave out the French bread and cut down the calories even more.
Yield: 6 servings
Peel tomatoes by bringing a large pot of water to a boil and adding tomatoes, one or two at a time. Allow the water to boil and adding tomatoes, one or two at a time. Allow the water to return to a boil and simmer for a minute. Remove the tomatoes and allow to cool. Running cold water over the tomatoes speeds the cooling. As soon as the tomatoes are cool enough to handle, remove the skin, which will slip off easily.
Soak the bread in water and then squeeze out most of the water.
Combine the bread, tomatoes, green pepper, onion, garlic, and large pieces of cucumber in a blender or processor and process to a puree. Add oil, and vinegar and process briefly to combine. Taste and add more salt or vinegar if desired. Serve chilled with the chopped cucumber on top.
