Spanish Rice

Packaged rice is too high in sodium! This spicy rice recipe uses brown rice and fresh vegetables for added nutrients.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 8 servings

  • Cooking spray
  • ½ cup white onion, chopped
  • 1 ½ cup brown rice
  • 1 small green bell pepper, diced
  • 2 celery stalks, diced
  • 2 jalapeno peppers, deseeded and diced
  • 2 cups tomatoes, deseeded and diced
  • 3 cups water
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • ¼ tsp cayenne pepper
  • In a pot over medium heat sauté onion, garlic in cooking spray until onion is translucent. Add water, rice, bell pepper, celery, jalapenos, tomatoes to onion and garlic.

    Bring mixture to a boil, reduce heat and add chili powder, cumin, cayenne and coriander.

    Continue to simmer for 50 minutes.
