Spanish Tortilla

A Spanish tortilla is comparable to an Italian fritatta. This thin, egg-white omelet is a delicious healthier alternative to traditionally high fat, high calorie quiches.

 

This recipe is Diabetes Friendly and Heart Healthy

Yield: 6 servings

Spanish Tortilla

  • 3 medium onions
  • 3 medium onions
  • 14 egg whites
  • 7 ounces pork loin
  • Chop onion and fry using cooking spray until onion becomes translucent. Chop pork into small cubes, removing fat, and pan fry in separate pan, also using cooking spray.

    Beat egg whites in a bowl and add onion and pork and stir well. Heat frying pan and spray with cooking spray. Cook tortilla on both sides. Serve hot.
