Watch Us Cook Caramelized Onions - Health eCooking™ Show

These savory caramelized onions are sauteed in a healthy oil instead of butter. Cooked onions can enhance meat, chicken or fish dishes with their dark, sweet, browned flavor.

 

This recipe is Diabetes Friendly and Heart Healthy

Yield: 4 servings or 2 cups

  • 4 Spanish onions, peeled and cut in half
  • 1 tsp. safflower or grapeseed oil
  • 1 sprig of fresh thyme or 1 tsp. dried thyme
  • Salt (ONLY A PINCH)
  • With the tip of a sharp knife, remove the core of onions. Slice onion halves thinly. Heat oil in large sauté pan on medium-high flame until slightly brown. Add onion slices. Season with thyme and a pinch of salt. Stir with a wooden spoon or a pair of tongs.

    Let onions render their liquid. As soon as most liquid has evaporated, onions will begin to brown. Stir. Begin to lower temperature. Keep cooking until onions become soft and are nicely browned. Monitor the heat so that the onions keep browning while not burning. The longer onions cook, the deeper the flavor.

    Remove from pan and let cool or serve warm if appropriate.
