Yield: 4 servings (4 sandwiches)
Brush 1 side of each slice of bread with olive oil. Sprinkle with garlic powder. Layer 4 slices of bread with cheddar cheese, spinach leaves and tomato. Top with remaining slices of bread.
Grill sandwiches until golden brown and until cheese is fully melted.
