Cucumbers with Sour Cream

This refreshing heart healthy side dish is low in fat, calories, cholesterol and sodium.

This healthy recipe is sure to cool you down on a hot day. It is also a great addition to a spicy meal. One large portion has slightly over 100 calories, so it is great for watching your weight!

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 4 servings

  • 3 cucumbers
  • 1 red onion
  • 1 cup fat free sour cream
  • 2 tbsp chopped pecans
  • 2 tbsp lemon juice
  • 1 tbsp sugar
  • Wash cucumbers thoroughly and slice. Slice onions into rings. Combine remaining ingredients and pour over cucumbers and onions. Stir and chill before serving.
