Broccoli and Cauliflower Salad

This crunchy broccoli and cauliflower medley create a light side dish. Is is also a great alternative to potato salad or macaroni salad.

Broccoli and cauliflower are known for being packed with many vitamins and minerals linked to reducing the risk of many types of cancer.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 10 servings

  • 6 cups broccoli florets
  • 4 cups cauliflower florets
  • 1/2 cup raisins
  • 1/3 cup sliced almonds
  • 2 Tbsp red wine vinegar
  • 1 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1 tsp honey
  • Freshly ground black pepper to taste
  • Steam broccoli and cauliflower in a large saucepan for 2 minutes, drain and pat dry with paper towels.

    In a large salad bowl, add broccoli, cauliflower, raisins and almonds together. Whisk together vinegar, lemon juice, olive oil and honey and pour evenly over the salad. Add freshly ground black pepper to taste.
