Tomato, Basil and Avocado Salad

This colorful salad is a great addition to any meal.

This is fantastic with fish, can be served with chicken and is wonderful with a hamburger in the summer.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 4 servings

  • 1 cup of cherry tomatoes, halved
  • 1 cup yellow tomatoes, chopped
  • 1/4 red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 avocado, pitted and diced
  • 1 clove garlic, minced
  • 2 tbsp balsamic vinegar
  • Freshly ground black pepper
  • Mix all ingredients together and serve cold.
