Easy Breakfast Taco

Here is an easy, healthy, on-the-go breakfast of scrambled egg whites, salsa and a touch of cheese. This quick breakfast will keep you full all morning.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 1 Taco

  • Cooking spray
  • 6 Tbsp egg whites
  • 1 Tbsp salsa
  • 1 Tbsp light cheddar cheese
  • 1 whole wheat tortilla
  • Mix egg white, salsa and light cheddar cheese together. Pour ingredients into a microwave safe bowl sprayed with cooking spray and microwave on high for 1 minute 30 seconds. Spoon out contents into tortilla, roll up and enjoy.
