Paella

Paella is a traditional Spanish dish that can be made with a variety of meats. This recipe replaces high fat beef sausage with healthier low fat chicken sausage and shrimp.

 

At less than 5 grams of fat and 300 calories, this paella recipe is heart healthy and great for those watching their calories.

Yield: 12 servings

  • 2 lbs shelled and cleaned shrimp
  • 1 clove garlic, chopped
  • 1 cup white wine
  • 2 cups low sodium chicken stock
  • 2 cups clam juice
  • 4 chicken sausages (should be precooked)
  • 3/4 cup chopped onion
  • 1 clove garlic, chopped
  • 2 cups brown rice
  • 1 tsp saffron threads
  • 2 cans artichoke hearts, drained
  • 1 jar whole pimentos, drained and chopped
  • 1 cup fresh or frozen peas, cooked and drained
  • Marinate shrimp in wine and garlic for at least one hour.

    In a large pan, add chicken stock and clam juice together. Add chicken sausages and allow to plump.

    Remove chicken sausages, cut into 1/4 inch slices and set aside.

    Add chopped onions, garlic and brown rice and simmer. Add pepper and saffron. Simmer until rice is fully cooked.

    Reduce heat and add shrimp to mixture. Stir until shrimp is cooked through. Add crabmeat, artichokes, pimentos and peas and stir until mixture is hot. Serve hot.
