Sauté mushroom, and spinach with olive oil. Once mushrooms are softened, combine spinach and mushroom mixture with sun dried tomatoes, milk, egg whites, cheese and tabasco.
Roll pie crust thin in order to cut into 24 circles. Spray muffin pan with cooking spray. Press individual circles into muffin cups. And fill with egg whites, vegetable and cheese mixture.
Bake at 375 degrees for 18-20 minutes or until center of quiches is set. To serve warm, cool 5 minutes before removing from pans.
