Chocolate Orange Mousse

Try this light and creamy chocolate mousse with a twist!

This easy healthy recipe is great anytime of year. At less than 170 calories per serving, it is great for dieting, and you will never have to turn this healthy dessert down. Prepare it for a party, your guests won't even know it is healthy!

This recipe is diabetes friendly.

Yield: 4 cups or 10 servings

  • 8 oz bittersweet chocolate
  • 2 12-oz packages of light silken tofu
  • 1/3 cup seedless raspberry fruit spread
  • 2 tbsp orange juice
  • 2 tbsp Triple Sec (or 2 more tbsp orange juice)
  • 1 tbsp vanilla
  • Chop chocolate into small pieces. In a microwave oven on medium power, or using a double boiler, melt the chocolate.

    In a food processor or blender, puree tofu until creamy, about 30 seconds, scraping sides as needed. Add all but the chocolate and puree until smooth. Add melted chocolate and puree until well blended, scraping sides as needed. Chill to desired temperature.

    Note: Mousse gets thicker as chilled; can be cut with light whipped topping.
