Broccoli Slaw

Make this low fat and low cholesterol heart healthy side dish for your next BBQ.

This quick recipe is great for a side dish for most meals. At only 115 calories and packed with potassium and many other vitmains and minerals. Broccoil Slaw tastes delicious and looks good next to any main course.

This recipe is heart healthy. Tbis recipe is diabetes friendly.

Yield: 3 Cups or 6 Servings

  • 2 cups shredded broccoli
  • 1 cup shredded carrots
  • 1 cup raisins
  • 1/2 cup sweet onion (optional)
  • Dressing:

  • 2 tbsp light mayonnaise
  • 1 tsp lemon juice
  • 2 tbsp skim milk
  • black pepper to taste
  • Combine broccoli, carrots and raisins in a large bowl. If you are adding onion, slice thinly and separate the slices.

    In a small bowl mix the lemon juice with the mayonnaise. Whisk in the milk and pepper. Toss the salad with the this dressing. Taste and adjust seasoning.
