Pumpkin Pie

The secret to this luscious and healthy, lightened up pumpkin pie recipe are egg whites, skim milk and reduced fat cream cheese. You can make this pie up to a day ahead; then cool, cover and chill.

Yield: 8 servings

Healthy Pumpkin Pie

  • 8 ounces reduced fat cream cheese, softened
  • 2 cups canned pumpkin, no salt added
  • 2/3 cup sugar
  • 6 egg whites
  • 3/4 cup skim milk
  • 1/4 cup melted trans fat free margarine
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1 pre-made pie dough
  • Preheat the oven to 350 degrees F.

    In a large mixing bowl, mix all ingredients (except pre-made pie dough) together with a hand mixer.

    Pour the filling into prepared pie crust and bake for 2 hours, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into 8 slices.
