This recipe is Diabetes Friendly and Heart Healthy
Yield: 6 servings
Cooking spray
1 whole wheat baguette, sliced into ¼ inch slices (should be about 24 slices, one serving will have 4 small bruschettas)
 Traditional Topping:
1 medium sized tomato, deseeded and chopped
1 clove garlic, minced
1/4 medium red onion, chopped
1/4 cup fresh basil, chopped
1 tsp oregano
1 Tbsp balsamic vinegar
Greek Topping:
1/4 cup kalamata olives, chopped
1/2 cup roasted red pepper, chopped
1/4 cup light feta cheese
1 tsp olive oil
1 Tbsp red wine vinegar
Freshly ground black pepper
Pistachio Topping:
1/4 cup pistachio nuts
1/2 cup chopped cilantro
2 Tbsp lemon juice
1 Tbsp zesty Italian dressing
Freshly ground black pepper
Spray baguette slices with cooking spray. Toast baguette slices in oven. In three separate bowls, mix together each set of ingredients. Spoon each topping on top of each toasted baguette slice.
