Rosemary Chicken Dijon Recipe

Serve this healthy, low fat chicken entree. This quick and easy, baked chicken recipe is heart healthy. Pound the breasts flat before baking to speed up cooking time.

Yield: 2 Servings

Rosemary Chicken Recipe

  • 2 Tbsp Dijion mustard
  • 2 Tbsp lemon juice
  • 1-2 garlic cloves, minced
  • 1 tsp dried rosemary or 4 fresh rosemary sprigs
  • freshly ground pepper
  • 2 oz chicken breast halves, skin removed (4 oz each)
  • Combine all ingredients except chicken in a flat baking dish. Add chicken, turning to coat well. Cover and marinate overnight or at least one hour in refrigerator, or 20 minutes at room temperature.

    Baking: Cover and cook at 375° approximately 25 minutes.

    Grilling: Cook over medium heat about 15 minutes.
