Spinach Walnut Bean Salad Recipe

This spinach salad is quick and easy to prepare for a summer luncheon or as a hearty dinner salad. The tangy dressing, crunchy walnuts and creamy feta cheese are a tasty combination.

Yield: 4 Servings

Spinach Walnut Salad

  • 1/4 cup chopped walnut halves or pieces
  • 1 can (16 oz) cooked kidney beans, drained and rinsed
  • 6 cups spinach leaves, ready-to-serve
  • 1 Tbsp olive oil
  • 1 Tbsp flavored vinegar
  • 1 Tbsp lemon juice
  • 1/8 cup sliced red onion
  • 2 Tbsp crumbled feta cheese
  • 1/4 tsp fresh ground black pepper
  • Combine all ingredients together in a large-sized mixing bowl. Serve immediately or chill up to 2 hours before serving.
