Strawberry Blintzes Recipe

Blintzes or Blinis are made with delicate, pancake-like crepes that are filled with cottage cheese and then topped with fruit. Each sweet serving has less than 150 calories.

Yield: 4 Servings

Strawberry Blintzes

  • 4 whole wheat crepes
  • 1 cup fat free pineapple cottage cheese
  • 4 large chopped strawberries
  • 4 Tbsp sugar free pancake syrup
  • Place 1/4 cup of cottage cheese on each crepe and top with one chopped strawberry. Roll up crepe and top with one tablespoon of sugar free pancake dressing (and a slice of strawberry for garnish).
