Truly Terrific Tacos Recipe

Try this quick, easy and delicious taco recipe. The tacos are low in fat compared to traditional Mexican taco recipes because they use veggie burger filling instead of beef.

Yield: 6 Servings

Truly Terrific Tacos

  • 3/4 cup onion, chopped
  • 3 garlic cloves, crushed
  • 1 cup bell pepper, finely diced
  • 1 cup tomato sauce with no added salt
  • 4 veggie burgers**, diced small (2.5 oz each burger)
  • 1 Tbsp chili powder
  • 1 Tbsp cumin
  • 1 Tbsp oregano
  • 12 corn tortillas (soft* or crispy), warm
  • 1 cup shredded romaine lettuce
  • 1 cup diced tomato
  • 1 cup diced green onion
  • Heat 1/2 cup of water in a 12-inch nonstick skillet over medium high heat. Add onion, garlic and pepper and cook until onion is soft, about 3-5 minutes. Add tomato sauce, veggie burgers and spices. Reduce heat and cook until veggie burgers soften and most of the sauce is absorbed. Fill warm corn tortillas with veggie burger mixture. Garnish with lettuce, tomato and green onion.

    *Microwave soft corn tortillas for 10 seconds to soften before using.

    **Veggie burger nutritional information varies by brand. This recipe is based on four 2.5 oz. veggie burgers.
