Mexican Cups Appetizer Recipe

Serve these delicious, spicy Mexican cups as a festive appetizer. They are made with chicken sausage, which has fewer calories and lower fat than pork sausage but is still full of flavor.

Yield: 18 cups (1 cup per serving)

Mexican Cups Appetizer Recipe

  • 2 chicken sausages*, precooked (3 oz per sausage)
  • 1/2 cup taco sauce
  • 1 Tbsp chili powder
  • 20 slices canned jalapenos
  • 1/4 cup egg whites
  • 1 cup reduced fat Mexican cheese blend
  • 18 wonton wrappers
  • Preheat oven to 350 degrees.

    Cut chicken sausages in half lengthwise and then into 1/8 inch thick slices. In a medium sized bowl, add sausages, taco sauce, chili powder, jalapenos, egg whites and cheese together. Mix thoroughly.

    Spray muffin pans with cooking spray, and place one wonton wrapper into each muffin cup. Spoon sausage and cheese mixture into each wrapper.

    Bake for approximately 20 minutes until cheese is melted and wonton wrappers become crispy. Serve hot.

    *Chicken sausage nutritional information varies by brand. This recipe is base on two 3 oz. chicken sausages.
