Pork Loin with Watermelon Avocado Salsa Recipe

This Asian-inspired pork loin is low in fat and fits into low carb and diabetic diets. The watermelon avocado topping is a unique salsa recipe that you can also serve as a side with tortilla chips.

Yield: 4 servings

Pork Loin Recipe

  • 4 pork loins (4 oz each), trimmed of fat
  • Spicy Asian Marinade

  • 1 Tbsp onion powder
  • 1 tsp crushed red pepper
  • 2 Tbsp fresh ginger, chopped
  • 1 chili pepper, deseeded and chopped
  • 3 garlic cloves, minced
  • 3 Tbsp low sodium soy sauce (gluten free, if needed)
  • 1 tsp sesame oil
  • fresh ground black pepper to taste
  • Watermelon Avocado Salsa

  • 1 1/4 cup watermelon cubes, 1/4 inch thick
  • 1 medium-sized avocado, deseeded and cubed
  • 1 small cucumber, deseeded and cubed
  • 2 Tbsp white balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 2 tsp low sodium soy sauce
  • 1/2 tsp sesame oil
  • Mix all marinade ingredients thoroughly. Rub each side of pork with marinade and then place pork in large plastic bag, refrigerate overnight.

    Combine all salsa ingredients together and set aside.

    Grill pork for 3 minutes on each side or until inside of pork loin is no longer pink. Top with salsa and enjoy.
