Cannellini Bean and Tuna Salad

This delicious spin on your ordinary tuna-mayo salad calls for healthy cannellini beans instead of high-fat mayo. Beans are high in dietary fiber, iron, and folic acid.

Combining the omega-3 fats in the tuna and the fiber from the beans makes this recipe super heart healthy. It is easy to whip up, and the whole family will love it.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 6 servings

  • 1 - 7 ounce can of tuna, drained
  • ½ cup red onion, chopped
  • ¼ cup green onion, chopped
  • 1 15.5 ounce can Cannellini Beans, drained and rinsed
  • 2 tbsp red wine vinegar
  • 1 tsp lemon juice
  • Lemon pepper seasoning to taste
  • Break up tuna using fork in a large bowl. Add onion and cannellini beans to tuna. Toss with vinegar and lemon juice. Add lemon pepper seasoning to taste. Serve at room temperature
