Chicken and Bulgur Wheat Salad

Bulgur wheat is a heart healthy alternative to rice or couscous. Try this delicious chicken and bulgur wheat salad warm or cold.

Bulgur wheat (also known as cracked wheat) is a fantastic grain that originated in the Mediterranean and has been a part of Middle Eastern diets for many years. It is easu to prepare, has a nutty taste, is incredibly versatile and is loaded with iron, thiamin and fiber. Try this healthy recipe tonight!

This recipe is heart healthy.

Yield: 2 servings

  • 1/2 cup dry bulgur wheat
  • 1 1/2 cup lightly steamed broccoli florets
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tsp lemon juice
  • Black pepper to taste
  • 4 ounces cooked chicken breast, cut into strips
  • Prepare bulgur wheat by adding water (amount will be specified on package) to the bulgur wheat and sitting it aside. Add broccoli, red onion, parsley and lemon juice together in a medium-sized bowl.

    Bulgur wheat absorbs most water. Drain off any excess water and add it to the vegetable mixture. Also add in chicken breast and season with black pepper to taste. Serve chilled or warm.
