Bell Peppers with Farro

Farro is a nutty tasting healthy and delicious rice alternative. Paired with sweet bell peppers this savory side dish works well with any meat or chicken dish.

Farro is an ancient grain. It has fed Meditteranean and Near Eastern cultures for thousands of years. Farro is a whole grain, packed with antioxidants and fiber. It can be found at a health food store, delicatessen or even a Meditteranean food market. If you cannot find farro, barley or even brown rice can be used in this recipe.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 6 servings

  • 1 cup farro or spelt prepared by package directions
  • 2 yellow bell peppers, deseeded and sliced into thin strips
  • 1 red bell pepper, deseeded and sliced into thin strips
  • 1 green bell pepper, deseeded and sliced into thin strips
  • 1/2 small red onion, sliced
  • 1 garlic clove
  • 1 Tbsp fresh parsley
  • 1 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • Mix farro, peppers, red onion together in a large salad bowl. Whisk together garlic, parsley, lemon juice and olive oil and pour over the mixture. Allow salad to sit in refrigerator for one hour before serving so flavors can combine.
