Chicken Cacciatore

Chicken cacciatore has never been easier or healthier! Serve this hearty classic Italian dish with whole wheat pasta and please the whole family.

Because of the addition of whole wheat pasta, this recipe offers over 75% of the recommended amount of manganese and over 25% of the recommended amount of selenium. Manganese is a mineral important for bone and nerve health and optimal function of the thyroid gland. And, selenium is an important antioxidant. The whole family will enjoy this healthy pasta recipe.

This recipe is heart healthy.

Yield: 4 servings

  • 2 tsp olive oil
  • 1/2 cup white onion, chopped
  • 2 garlic cloves, minced
  • 1 green pepper, deseeded and chopped
  • 1 cup mushrooms, sliced
  • 4 cups diced tomatoes
  • 1 pound boneless, skinless chicken breast, cut into 2-inch pieces
  • 1/2 cup fresh basil
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup fresh parsley, chopped
  • 8 ounces uncooked whole-wheat spaghetti
  • Heat oil in a stock pot over high heat. Add in onions, garlic, green pepper, mushrooms and tomatoes. Saute until vegetables are tender, about 4 minutes.

    Add chicken and sauté until golden brown. Add basil, black pepper, parsley and stir together. Turn down heat and allow to simmer.

    Cook spaghetti and a separate pot according to directions on package. Serve one cup of spaghetti with one cup of mixture for each serving.
