Chicken Ballotine

This quick chicken dinner is made with fresh vegetables for a delicious flavor and a healthy meal.

When serving this meal, everyone will think you are an experienced chef. It not only looks great; it is also great for you (and does not take an experienced cook to prepare). Try this high protein, low carbohydrate dinner recipe with a side of mashed potatoes or ratatouille.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 6 servings

  • 6 small boneless chicken breasts (about 4 ounces)
  • 4 egg whites
  • 1/4 cup low fat yogurt
  • 1/2 tsp fresh ground pepper
  • 1/4 cup each diced vegetables (carrots, spinach, celery, leeks, turnips)
  • 32 oz low salt chicken stock
  • Trim breasts of excess fat. Using a mallet, gently pound flat the breast. Set aside.

    Using a blender, mix egg whites and yogurt, and blend until smooth. Remove from blender and stir in vegetables. Spread thinly on top of breasts. Roll tightly in a pinwheel fashion. Secure with another layer of plastic film.

    Simmer gently in the chicken stock over low heat for 35 minutes. Remove film and slice across the pinwheel to show the colors on the inside.
