Chicken and Pineapple Kabobs

This healthy chicken and pineapple kabob recipe is easy to prepare on the grill or in the oven. The spicy chicken is accompanied by refreshing fresh pineapple.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 4 servings, 16 skewers

  • 8 ounces chicken breast, cooked and cut into 16 cubes
  • 1 cup fresh pineapple, cut into cubes
  • 1 cup cherry or plum tomatoes
  • 1 large green bell pepper, chopped
  • ½ red onion, chopped
  • Freshly ground black pepper , if desired
  • Marinade:

  • 1/4 cup fresh lime juice
  • 2 Tbsp honey
  • 1/2 tsp cayenne pepper
  • 2 tsp chili powder
  • 1 Tbsp finely chopped cilantro
  • To prepare marinade, whisk together all ingredients.

    Using a presoaked skewer add one pineapple chunk, one piece chicken, cherry tomato, green pepper and red onion. Repeat if skewer is long enough (keep in mind serving size will be only two skewers). Then, marinate for at least one hour. Add freshly ground black pepper, if desired. Grill skewer until chicken is cooked through.

    Serve hot over Spanish rice.
