Shrimp Toast

Serve this delicious shrimp toast as an appetizer any time of the year.

They are super simple and no one will believe they are heart healthy or only 88 calories a serving.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 12 servings

  • 1 pound cooked and peeled shrimp
  • 1/4 cup minced green onions
  • 2 tablespoons minced fresh cilantro
  • 1 teaspoon minced garlic
  • 1/4 teaspoon cayenne pepper
  • 1 egg white
  • 1/4 cup skim milk
  • 1/4 pound light cream cheese, cut into pieces
  • 12 slices crusty whole grain bread (similar to a whole grain baguette)
  • In a food processor, combine the shrimp, green onions, cilantro, garlic, cayenne pepper , egg white, milk and cream cheese. Be careful not to over-process the mixture should be chunky.

    Spread 2 heaping tablespoons of the shrimp mixture onto each slice of bread, spreading to the edges and smoothing the top.

    Broil the shrimp toasts on high for 10 minutes. Bake for additional 10 minutes at 300 degrees.
