Tomato Barley Risotto

A hearty and healthy dish that everyone will love.

Barley adds a wonderful nutty taste and chewy texture to this delicious risotto-style one-pot meal. Better yet - barley helps reduce blood pressure and improve LDL/HDL cholesterol levels.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 6 servings

  • 1/2 cup chopped onion
  • 1 cup pearl barley, dry
  • 1 15-ounce can diced stewed tomatoes, no added salt
  • 1 6-ounce can tomato paste, no added salt
  • 2 cups water
  • 1 15-ounce can chicken broth (low fat, low sodium)
  • 1/2 tbsp each: garlic powder, dried oregano, dried basil
  • Black pepper to taste
  • 4 tbsp Parmesan cheese
  • Set Parmesan cheese aside. Combine all remaining ingredients in large microwave container. Microwave on full power for 30-40 minutes or until barley is tender. You can also cook on top of the stove.

    Stir occasionally during cooking. The barley risotto is done when the barley is tender and most of the liquid is evaporated. Sprinkle the top of each portion with 1 tablespoon of Parmesan cheese.
