Diabetic Recipe - Gluten Free Recipe Yield: 4 servings 4 pork loins (4 oz each), trimmed of fat
Spicy Asian Marinade
1 Tbsp onion powder
1 tsp crushed red pepper
2 Tbsp fresh ginger, chopped
1 chili pepper, deseeded and chopped
3 garlic cloves, minced
3 Tbsp low sodium soy sauce (gluten free, if needed)
1 tsp sesame oil
fresh ground black pepper to taste
Watermelon Avocado Salsa
1 1/4 cup watermelon cubes, 1/4 inch thick
1 medium-sized avocado, deseeded and cubed
1 small cucumber, deseeded and cubed
2 Tbsp white balsamic vinegar
2 Tbsp extra virgin olive oil
2 tsp low sodium soy sauce
1/2 tsp sesame oil
Mix all marinade ingredients thoroughly. Rub each side of pork with marinade and then place pork in large plastic bag, refrigerate overnight.
Combine all salsa ingredients together and set aside.
Grill pork for 3 minutes on each side or until inside of pork loin is no longer pink. Top with salsa and enjoy.
