Spinach Walnut Salad

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 4 servings

  • 1/4 cup chopped walnut halves or pieces
  • 2 cups cooked kidney beans, drained and rinsed
  • 6 cups spinach leaves, ready-to-serve
  • 1 tbsp olive oil
  • 1 tbsp flavored vinegar
  • 1 tbsp lemon juice
  • 1/8 cup sliced red onion
  • 2 tbsp crumbled feta cheese
  • 1/4 tsp fresh ground black pepper
  • Combine all ingredients together in a large-sized mixing bowl. Serve immediately or chill up to 2 hours until ready to serve.
