Vegetarian Sloppy Joes

Here's a spicy dish that makes an easy meal with zero fat and zero cholesterol a healthy twist on the old classic.

Regular sloppy joes have over 600 calories and 25 grams of fat in ONE SANDWICH. This delicious recipe has less than 200 calories and 2 grams of fat. And, your kids will like these too!

Yield: 4 (1 cup) servings

  • 4 whole wheat or multi-grain rolls, sliced in half and toasted
  • 1/2 cup each, sliced: zucchini, green onion, mushrooms, kidney beans
  • 1 can (15 1/4 oz) stewed diced tomatoes, drained (1 1/4 cups)
  • 1/2 cup barbecue sauce (available in sugar free, too)
  • 1/4-1/2 tsp chili powder

Heat a large nonstick skillet over medium-high heat. Add vegetables, beans, tomatoes, barbecue sauce and chili powder and bring mixture to a boil, stirring well. Reduce heat to a simmer and cook until vegetables are tender, about 4-5 minutes. Serve vegetarian sloppy joe on toasted bun halves in open face style. This dish goes well with a tossed salad or low fat slaw.
