Diced Summer Salad

Here is an easy and low calorie recipe loaded with summer vegetables while fresh produce is at its best.

Not only are veggies good for you because they are high in vitamins, but they are also low in calories due to their high water content. Combining veggies with a little vinegar and pepper is a great way to fill up on a tasty dish without consuming the calories. Eat low calorie dishes like this in addition to your meal, and it will help you lose weight.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 2 servings

  • 2 medium tomatoes, dice and drain
  • 1 large cucumber, diced
  • 1 green pepper, remove seed and dice
  • 3 scallions (whites only) sliced thin
  • 2 Tbsp chopped parsley
  • 2 tsp lemon juice or balsamic vinegar
  • freshly ground black pepper to taste
  • Combine all vegetables, add the parsley, salt, pepper and lemon juice (or balsamic vinegar) and mix gently. Taste and adjust seasonings, if necessary.

    You can vary this recipe by adding sliced celery, carrots, cooked corn kernels, chopped mint, basil, or any other herb and summer ingredient that strikes you fancy.
