Cabbage and Red Pepper Salad

Try this colorful healthy cabbage and red pepper salad instead of high fat cole slaw, potato or macaroni salad.

Fill up on this side dish and save yourself the calories. It is only 53 calories per serving and loaded with vitamin C and fiber. And this salad will keep you full longer.

This recipe is heart healthy. This recipe is diabetes friendly.

Yield: 8 servings

  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 3 Tbsp sugar
  • 1/4 tsp celery seed
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 4 cups shredded cabbage
  • 3 large red bell peppers, cut into thin strips
  • 1 onion, thinly sliced
  • In a small saucepan, boil vinegar, water, sugar, celery seed, salt and black pepper until sugar dissolves. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat.

    In a very large nonstick saucepan, warm the oil over medium-high heat. Add the cabbage, bell peppers, and onion and toss gently. Sauté, tossing often until vegetables begin to soften and cook down, 6 to 7 minutes.

    Stir in the vinegar mixture and bring to a boil. Cover, reduce the heat and toss occasionally until the vegetables are very tender, 6 to 8 minutes.

    Serve warm or chilled.
