Andalusian Gazpacho

Serve this healthy low calorie cool Spanish soup as refreshing start to any meal.

This delicious soup is packed with nutrients and low in calories. Leave out the French bread and cut down the calories even more.

This recipe is heart healthy.

This recipe is diabetes friendly.

Yield: 6 servings

  • 2 lbs ripe tomatoes, peeled
  • 3 thin slices of French bread
  • 1 green pepper, cut into large pieces
  • 1 small onion, cut into chunks
  • 1 clove garlic
  • 1 cucumber: 1/2 cut into large pieces, 1/2 chopped into small pieces for garnish
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar (or to taste)
  • Here's how to peel tomatoes:

    Bring a large pot of water to a boil and add tomatoes, one or two at a time. Allow the water to boil and add tomatoes one or two at a time. Allow the water to return to a boil and simmer for a minute. Remove tomatoes and cool. Run cold water over the tomatoes to speed the cooling process. As soon as the tomatoes are cool enough to handle, remove the skin, which will slip off easily.

    Soak the bread in water and then squeeze out most of the water.

    Combine the bread, tomatoes, green pepper, onion, garlic, and large pieces of cucumber in a blender or food processor to puree. Add oil and vinegar and process briefly to combine all ingredients. Taste and add more salt or vinegar if desired. Serve chilled with the chopped cucumber garnish on top of each cup.
